Through Other Eyes: Animal Stories by Women is a 1988 anthology edited by Irene Zahava.
While not completely fantasy, the "animal stories" genre, by virtue of its frequent perspective, is often fantastical; in addition, this particular collection includes some real and some fantastic observations of animals.
